Fall apple crisp recipe

Well, fall (er winter) is here in Colorado.  This week brought temperatures in the 20’s and a dusting of snow here in the Front Range.  Caused me to pull out my famous apple crisp recipe.  As with the others, it brings raves and repeated requests to make year round.  Here it is:

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 1/2 cup melted shortening
  • 1 cup oatmeal
  • 1 cup flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 cups granny smith apples
  • 1/2 cup walnuts (optional)
  • 1/2 cup melted caramel (optional)
  • 1/2 cup honey (optional)

In a bowl, cream sugars, butter and shortening.  Add oatmeal and stir well.  Sift together flour, baking powder, cinnamon and salt.  Add to mixture and stir well.  Press half of mixture into a 11×7 pan or smaller if thicker crisp is desired.  Now I will take the sliced apples in a separate bowl and sprinkle some additional sugar and cinnamon in the bowl, cover and shake so they evenly coat apples.  I then put apples in microwave for two or three minutes to soften up.  Add apples and sprinkle with crushed walnuts.  Cover by sprinkling with rest of mixture.  Bake for 30 minutes at 350 degrees.  Once out of oven, I like to drizzle the top with honey and caramel.  With a scoop of vanilla ice cream, it won’t get any better.  Enjoy………..
